Bakery relocating from Pierceton to downtown Warsaw

WARSAW — Downtown Warsaw will soon have a new bakery that plans to open in the former home of B+B Courthouse Market, which closed earlier this year.

Bakehouse 23 has been operating in Piercetgon for a few months, but Kaley Dawson said she and her husband, Devin, jumped at the chance to relocate to Warsaw.

“We think that Warsaw is just a great opportunity for us. I had always wanted to be downtown, it was just hard to find a space,” Dawson said Tuesday.

“We’ve noticed a lot of our customers are coming from Warsaw and Winona Lake out to Pierceton anyways so it just made sense to just move to Warsaw,” she said.

The 23 in the store name is based on the fact that she and Devin are both 23 years old and that they both appreciate Psalms 23.

She grew up south of Chicago and her interest in baking began in high school. She attended a year in culinary school and then transferred to Grace College where she studied entrepreneurial management.

She had been working from home for several years and has had a booth at the Winona Lake Farmers Market for two years

“We started out (doing) custom cakes. We do a lot of wedding cakes, but we also have cupcakes. We’ll have 12 flavors of cupcakes in the store every day. We also do macarons, croissants, cheesecakes,” she said.

They also hope to offer a selection of sandwiches, using freshly baked sourdough bread and will offer coffee provided by Three Crowns Coffee.

Dawson said they hope to open by Oct. 1.
